Tues-day's SO Fantastico

I realized a couple things today:

1. I'm in love with Paparazzi by Lady GaGa... homegirl might be NUTS and have a complete lack of fashion sense and wear bubble wrap three days out of the week but she knows how to make you listen to the same song about 5 times in a row.. hence the title today. Thumbs up to the crazy girl with the pokah face.




2. Pears need to be a year-round in season fruit, seriously, it would make me so so so happy.

3. I'm going to run the Turkey Trot this year!! A couple of my girlfriends have ran it the past few years and for some reason I never have. 6.2 miles (pretty hilly, too) which will be a challenge for me with these GD shin splints, but all the more reason to try it, right? I'm going to make sure I'm absolutely ready come November... I'm hoping to complete a few more from that list too.. there's so many running events around this time in CT so I'm really excited!! :)

4. I think it's time to try overnight Oats... I want to make them up tonight so they're ready for tomorrow A.M. after my run.... So I could use a little advice from you buttons: What's the best way to prepare them? Best extra ingredients to add, etc.?

I'm psyched to try them for the first time..
I've heard the pumpkin oats recipes are good and being the fan of Fall that I am, that would prob be my preference... :) Very fitting for the season

Onto the foodage!

Lunch was a giant salad after my run which unfortunately ended up being 3 miles rather than the 4 I had planned :(

Not too happy about that but for some reason my feet just felt like LEAD today. I felt like each minute that passed was requiring more and more energy that I just didn't have... not to mention I still can't breathe through my nose so the cold air today wasn't helping my throat. It's SO frustrating to me when I have days like this.

Do you ever have days where you just feel UNathletic?? Like all energy you had prior to the run magically disappears?

Boo to today's running.

Anyways.... lunch was a giant salad :)
The usual suspects:
Baby Spinach
Field of Greens lettuce mix
Plum tomatoes
Red beans
2 VeggieBalls
1/4 of an avocado
Shredded carrots
Hefty scoop of hummus
And I added 1/2 a toasted pita on the side for sandwiching purposes.

I baked up the rest of the cookie dough I had made the other day...
My mom always brings Chocolate Chip Cookies up to VT each year when they vacation with my stepdad's parents and I got nominated for the baking this time because apparently I'm the baking biotch... not that I mind :)

But I had to bake them after a double at work (lame) so I had to whip up the batter and throw in 2 dozen cookies, wait for them to bake, want to do nothing but sleep and rest my feet at 11pm (double lame) sooo once the 2 dozen were done you bet yoself I refridgerated the rest & headed straight to the mem-foam and was spent until late the next morning...


My afternoon snacky:
Cup of my regular cinnamon java & a perfectly ripe pear... this one is what made me fall in loooove with pears all over again.
Juicy, sweet, perfection in fruit form + my delicious Autumn cup of brewed goodness...
You two were meant to be together<3>

Oh and throw in a trashy US Weekly and you have a little threesome action (inapprop?) that kept me happy for most of the afternoon Celebrity Triathalon-ers!
Including Teri Hatcher, Jennifer Lopez, Matthew McConaughey (no surprise there the man's a gorgeous beast of a fitness machine), & Edward Norton. Pretty cool :)


Dinner was out of this world delicious:

I made stir fry with:

1/2 c. long grain brown rice
1/2 c. peas
1/2 c. corn
Big handful of shrimp
4 chopped mushrooms
2 cloves garlic minced
Splash of soy sauce
1/4 c. chicken broth
Sprinkle of parsley, salt, & pep



Quick & easy (minus the rice when 1/2 of it was lost to the heat & stuck to the bottom of the pot, ugh!) but it was so filling & flavorful... definitely making it a regular week night dinner when I want to throw something together last minute.



SO...that's that. Time for a little Kitchen Nightmares (because my wireless now works at my house and I can lounge in my comfy bed while watching my fav shows on the internet AND eat my dessert at the same time!) Oh heyyyy, obviously a fab & very non-lazy Tuesday night for me! ;) HA!

  4. i would def go with the pumpkin cookies- anything pump ROCKS :) you def need to try pumpkin oats, they're my new obsession. so yummy!

  5. homegirl, lady gaga is comlete nuts BUT i do love that song too!! i hope i dont get sick of it like i did with pokerface though! if i have to hear that song one more time.....

    i vote for iced pumpkin cupcakes, those sound uhhhamazing and so fall-ish!!! you can send me one if you would like too :)
